With fall harvest just around the corner and apples starting to come in, we thought we would include a few apple recipes to try with the fresh apples you can get from one of the many Medina County orchards:

Apple Cheddar Spread
½ cup tart apple, unpared and finely chopped
¼ cup shredded Cheddar cheese
1 tablespoon mayonnaise or salad dressing
1 tablespoon honey
Mix all ingredients in small bowl. Microwave, uncovered on medium (50 percent), about 1 minute or until cheese is softened. Spread on sliced French bread, bagel chips or crackers if desired. Makes about ¾ cup.
Apple Crisp
6 cups sliced, pared or unpared apples (about 6 tart, firm apples)
1 cup sifted flour
1 cup sugar
1 teaspoon baking powder
¾ teaspoon salt
1 unbeaten egg
1/3 cup melted and cooled shortening
½ teaspoon cinnamon
Place sliced apples in a greased 6x10 inch baking dish. Mix together with fork until crumbly (the flour, sugar, baking powder, salt and unbeaten egg). Sprinkle over the apples. Pour over all the melted, cooled shortening. Sprinkle with cinnamon. Bake 30-40 minutes in a 350 degree oven. Serve warm with cream or top with milk. Makes 8 servings.
Hot Spiced Cider
1 gallon cider
12 cloves
2 cinnamon sticks
½ lemon sliced
1 tablespoon honey
Mix above ingredients together in pan. Simmer 10 minutes to 1 hour. Strain before drinking. This can be kept in refrigerator and warmed in microwave as needed.
Apple Sausage Casserole
6 bacon strips
8-10 links of brown & serve sausage
1 small onion, chopped
3 cups chopped tart apples
½ cup chopped green pepper
2/3 cup diced celery
2 cups cooked rice
½ cup thinly sliced tart apples
3 tablespoons brown sugar
½ cup apple juice
Fry bacon until crisp; remove bacon, drain, crumble and set aside. Cut each sausage link into thirds; combine with onion, chopped apple, green pepper, celery and cook in bacon drippings over low heat, about 10 minutes. Spread 2/3 cups of cooked rice on bottom of greased 1 ½ quart casserole; cover with half of sausage mixture, sprinkle with another 2/3 cup rice, remaining sausage mixture and lastly the remaining brown sugar. Pour apple juice over all. Cover casserole. Bake at 350 degrees for about 45 minutes. Serves 6-8.
“A Walk with Spirits of the Past”
September 11, 12 & 13 will be the 14th Annual “A Walk with Spirits of the Past”. Each fall, local actors from Medina County Show Biz Company give performances that tell stories of the lives of Medina pioneers and bring to life the people who made history in early Medina. Actors are located throughout the Square and guests are guided to each performance in groups of 10-20 leaving from the County Administration Building every 10-15 minutes.
Tickets can be purchased in advance at Ormandy’s Trains and Toys at 10 Public Square or at the registration area outside the County Administration Building. Performances are Friday and Saturday, September 11th & 12th from 7pm until 9pm, and Sunday, September 13th from 2pm until 4pm.
The event is hosted by Medina County Show Biz Company, Medina County Historical Society and the Medina County Arts Council. The tours start at the Medina County Administration Building at 144 N Broadway in Medina. Advance tickets purchased at Ormandy’s are $4.00 for adults and $1.50 for children under 12. Tickets sold the day of the event are $5.00 for adults and $2.00 for children under 12. Call 330.725.6443 for more information.
Johnny Appleseed Festival
Keep the weekend of September 19th and 20th open for a trip to Mapleside Farm’s Johnny Appleseed Festival. The two-day event will host crafts, great food, entertainment and, of course, apples.
The festival will host over 70 crafters and artisans from around Ohio selling their handiwork. There will be entertainment throughout the weekend including bands, cloggers and dance groups that will be on stage. The two-day event will, of course, feature “APPLES”. They will have their fall special “Bag Your Own” where you can choose from your favorite varieties in large bins, mixing the varieties you like best. This allows everyone in the family to enjoy their favorite apple.
Mapleside will also feature apples in many forms; from caramel and candied apples, apple butter, apple butter BBQ sauce, apple cider, apple fritters, apple dumplings and apple pies. Along with the apples, Mapleside will offer BBQ pork sandwiches and ribs.
While you are at the festival, be sure you stop in the apple house for fresh produce, the bakery and the gift shop. The Apple Farm Restaurant is a great place to enjoy a home cooked meal overlooking the orchard and corn maze. There will be children’s activities, pony rides, horse drawn wagon rides and a corn maze.

Hinckley Driving Tour (approximately 30 mile drive) MedinaCounty
As you drive throughout MedinaCounty – be alert. We are still a rural community and have blind corners and farm equipment on the roads. Drive safely.
Medina Square
Be sure to visit the many shops and restaurants on and around the Historic Medina Square. The Medina Gazebo was designed after the Gazebo in Bellevue, Ohio. Ours was completed in 1974, and is used for weddings and concerts on the Square every Friday night in June & July where the Medina Community Band holds a free concert. From historic Medina Square, take Washington St east (St Rt 18 East), turn left onto Jefferson St and then turn right onto Liberty St.
Medina County Courthouse
Originally the court house was built in 1841 as a Greek Revival. In 1873 they added the north and south wings, the three tiered tower, mansford fish scale roof and a colonial front porch changing the style to Second Empire.
United Church of Christ
Across Liberty St from the court house is the United Church of Christ. It was built in 1880. It is one of the oldest congregation’s in the County. Note the meridian stone on the corner. It shows the longitude and latitude of Medina.
Town Cemetery
On your left just past the Church of Christ is the town cemetery started in 1820. It has beautifully cut stones and includes most of Medina’s early pioneer settlers.
St. Paul’s Episcopal Church
Next to the cemetery is St. Paul’s, a stone gothic style church built in 1884.
Continue on Liberty St (St Rt 3 North). Note the many historic homes on Liberty St. At the intersection of Liberty St and Spring Grove continue straight. The road name will change to Weymouth Rd.
Spring GroveCemetery
Spring Grove Cemetery is on your right. It was started in 1883 when the community bought 34 acres, turned it over to the Ladies Cemetery Association to oversee management and construction of the cemetery. By 1884 they had built a new chapel. Some early rules of the cemetery included: Only entering at the west entrance. The cemetery was open from sunrise to sunset. The Sexton had the right to refuse entrance to individuals if they had disobeyed rules in the past or had caused damage. No picnics allowed. Visitors were not allowed to touch anything that was not theirs. No fast driving of coaches. No hitching horses to trees.
Medina High School
On your left,
MedinaHigh School just completed a major expansion to increase its size. The expansion included a community recreation center and performance hall. Next on your left is ReaganPark. The park offers a fitness track, sports fields and ice skating.
Continue in on St Rt 3 North (Weymouth Rd). You will pass Fox Meadow Country Club at Weymouth on your left. After the stop light at Fenn Rd, take the first right turn onto S Weymouth Rd. The town of Weymouth would have been the county seat but Elijah Boardman offered land for the park and the first court house in Medina. So Medina became the county seat. On your left will be WeymouthChurch which was started in 1835 and is a Greek Revival style. On the left corner at the intersection with Remsen Rd is the Seymour house built in 1851. The large pine tree was planted at the completion of the house. The iron fence has a stone foundation that is 3’ deep.
When you get to Weymouth Rd (St Rt 3 North) turn right and follow St Rt 3 north. When you get to Ridge Rd, turn left (St Rt 3/94 North) and follow St Rt 3 into Hinckley.
Hinckley Historical Society
The Historical Society is housed on the right (southeast) corner of St Rt 303 and Ridge Rd and is open by appointment.
For those who love flowers, gifts, plants, collectibles, crafts and gardening, continue north across St Rt 303 and on the left will be The GreenSmith Country Garden Center. When leaving, turn right onto St Rt 3 south, then left onto St Rt 303 east.
Hinckley Elementary School will be on your right. This is home to the Hinckley Buzzard Day. They have a craft show and pancake breakfast the weekend of March 15th or the first weekend following the 15th.
Turn right onto Hinckley Hills Rd (St Rt 606 South).
Then turn left onto Bellus Rd.
Buzzard Cove Miniature Golf
Buzzard Cove is on the corner of Bellus Rd and St Rt 606. They are a driving range and offer two fun miniature golf courses with a snack bar.
Cleveland MetroParks, Hinckley Reservation
Turn right onto West Dr.
Hinckley Lake/Dam and swimming area will be on your left. Part way around the lake will be Hinckley Lake Boathouse, where you can rent paddle boats or take a boat ride of the lake.
Continue on West Dr. There will be a scenic overlook on the left side. Further up the road on the right will be Buzzard Roost.
Buzzard Roost is where the ranger waits to site the return of the Hinckley buzzards every March 15th.
Turn left at State Rd, cross the bridge at the bottom of the hill and turn right into Whipp’s Ledges.
Whipp’s Ledges is a 1.25 mile hiking trail in and around the ledges. The trail loops through the spectacular 350’ Sharon conglomerate ledges. This is a fun place to relax and wander on the trails and on the ledges.
When leaving turn left onto State Rd. (If you turn right onto Ledge Rd, it will take you to the MetroParks Ledge Pool and the Hinckley Historical Society Worden Home. Worden Ledges is where Noble Stuart carved in the ledges. The home and ledges are open by appointment.) In approximately 4.5 miles turn right off State Rd onto Granger Rd, at the intersection of Granger and Coddingville Rd will be Granger Historical Society. The Historical Society is open April-October the first Saturday of the month 1pm-3pm or by appointment. The Home contains period furnishings and a doll collection. They also maintain the Underwood Library which contains historical reference material and Indian artifacts.
Continue on Granger Rd back to Weymouth Rd. (Watch as Granger Rd will make a right turn approximately 4 miles from the Historical Society). At Weymouth turn left and this will take you back to Medina’s Public Square.
